Venison Steaks With Lemon & Herb Seasoning

This recipe is perfect for anyone trying venison for the first time. The meat is similar to beef but has a slightly tangy flavor, enhanced beautifully by Lemon & Herb Seasoning. Using the reverse sear method keeps it tender while giving it a delicious sear over the grill.

Ingredients

  • 2 venison steaks

  • Club House Lemon & Herb Seasoning

  • Salt and freshly ground pepper, to taste

  • 12 brussel sprouts, halved

  • ¼ cup butter, melted

  • ¼ cup water


Method

  1. Preheat the grill to 300°F and set up for indirect grilling.

  2. Rub the venison with Lemon & Herb Seasoning, salt, and pepper.

  3. Place the brussel sprouts cut-side-up on a baking sheet. Drizzle with butter, season with salt and pepper, flip, then pour water over them.

  4. Place both the steaks and sprouts on the grill over indirect heat. Close the lid and cook for 35–40 minutes, until the venison reaches 140°F.

  5. Remove the venison. If the sprouts are tender and slightly caramelized, remove them too. Otherwise, leave them on until the steaks are ready.

  6. Preheat the Infrared SIZZLE ZONE™ and sear the steaks over direct heat for 1–2 minutes per side until grill marks appear.

  7. Let the steaks rest for 5 minutes before serving with the brussel sprouts and your favorite sides.
