Bacon Bourbon Chocolate Chip Cookies

These cookies are crispy, chocolatey, and bacon-y, with a hint of bourbon for extra flavor. Warning: they’re addictive.

Ingredients

  • 6–10 slices thick-cut bacon

  • 2½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • ¼ tsp baking powder

  • ½ cup butter, room temperature

  • ½ cup reserved bacon fat

  • ¾ cup white sugar

  • ¾ cup packed brown sugar

  • 2 tbsp bourbon

  • 1 tsp vanilla extract

  • 2 large eggs

  • 2 cups chocolate chips


Method

  1. Cook the bacon:

    • Fry until crispy. Reserve ½ cup of bacon fat and cool to room temperature (like softened butter).

    • Drain bacon, cool, then break into pieces. Set aside some larger pieces for topping.

  2. Preheat the grill:

    • Set to 375°F using indirect heat (one burner is enough).

  3. Mix dry ingredients:

    • In a bowl, whisk together flour, baking powder, salt, and baking soda.

  4. Mix wet ingredients:

    • In another bowl or stand mixer, combine butter and bacon fat.

    • Add sugars and mix.

    • Add eggs one at a time, then vanilla and bourbon.

  5. Combine ingredients:

    • Gradually mix in the flour mixture.

    • Fold in the bacon and chocolate chips.

  6. Prepare cookie sheet:

    • Spoon about 1 tbsp of dough per cookie, leaving 1-inch space between cookies (approx. 12 per sheet).

  7. Bake on the grill:

    • Bake for 9 minutes per batch.

    • If baking unevenly, rotate the sheet halfway.

  8. Finish & cool:

    • Cookies should be golden at the edges, soft in the center.

    • Top some cookies with reserved bacon pieces.

    • Transfer to a cooling rack.

  9. Store:

    • Keep in an airtight container in the fridge. Cookies are best enjoyed quickly!
