Bacon Bourbon Chocolate Chip Cookies
These cookies are crispy, chocolatey, and bacon-y, with a hint of bourbon for extra flavor. Warning: they’re addictive.
Ingredients

6–10 slices thick-cut bacon

2½ cups all-purpose flour

1 tsp baking soda

¼ tsp baking powder

½ cup butter, room temperature

½ cup reserved bacon fat

¾ cup white sugar

¾ cup packed brown sugar

2 tbsp bourbon

1 tsp vanilla extract

2 large eggs

2 cups chocolate chips
Method

Cook the bacon:

Fry until crispy. Reserve ½ cup of bacon fat and cool to room temperature (like softened butter).

Drain bacon, cool, then break into pieces. Set aside some larger pieces for topping.

Preheat the grill:

Set to 375°F using indirect heat (one burner is enough).

Mix dry ingredients:

In a bowl, whisk together flour, baking powder, salt, and baking soda.

Mix wet ingredients:

In another bowl or stand mixer, combine butter and bacon fat.

Add sugars and mix.

Add eggs one at a time, then vanilla and bourbon.

Combine ingredients:

Gradually mix in the flour mixture.

Fold in the bacon and chocolate chips.

Prepare cookie sheet:

Spoon about 1 tbsp of dough per cookie, leaving 1-inch space between cookies (approx. 12 per sheet).

Bake for 9 minutes per batch.

If baking unevenly, rotate the sheet halfway.

Cookies should be golden at the edges, soft in the center.

Top some cookies with reserved bacon pieces.
